A simple, make-ahead honey mustard-glazed carrot recipe that's the perfect Christmas side dish. Easy to prepare with beautiful caramelization and rich butterscotch flavour, it reheats beautifully so you won't be stressed on the day.

Carrots, peeled and halved lengthways1 kg
Extra virgin olive oil1½ tbsp
Unsalted butter3 tbsp
Honey2½ tbsp
Dijon mustard1 tbsp
Fresh thyme sprigsIf using dried thyme, use 1/2 tsp of each variety instead12
Fresh dill, roughly choppedOptional~2 tbspest.

Peel the carrots if desired and slice them in half lengthways. Uniform sizing ensures even cooking and caramelization.

Gather 12 thyme sprigs and finely chop a small portion for garnish at the end. Remove any woody stems if needed.

If using dill and nuts, prepare them now by roughly chopping the dill and crushing the roasted nuts. Both are optional.

Heat a large pan to medium-high and add the olive oil. Place in the carrots with a pinch of salt and cook for 3-4 minutes, stirring often to develop caramelization.

Add butter, honey, Dijon mustard, and all thyme sprigs. Allow the butter to melt and thoroughly combine all ingredients, ensuring the carrots are evenly coated.

Transfer the carrots and all sauce to a roasting tray, scraping the pan clean. Spread the carrots in an even layer.

Bake in a preheated 200°C (400°F) oven for 30-35 minutes until the carrots are golden and caramelized with a sticky glaze.

Remove from oven and discard any burnt thyme sprigs. Top with the reserved chopped thyme, crushed nuts (if using), and fresh dill (if using). Finish with a sprinkle of sea salt flakes.

For make-ahead preparation, remove from the oven at the 30-minute mark without fresh garnishes. Cool and refrigerate for up to 3 days. On Christmas day, reheat in the oven for 10-15 minutes and add fresh toppings before serving.
