    In a separate small pan, heat 1 teaspoon of oil and 1 teaspoon of ghee. Temper the mustard seeds, urad dal, cumin seeds, curry leaves, red chillies, and coriander leaves until fragrant, then pour this tempering into the sambar and stir well.
