Sweet Kozhukattai (Steamed Rice Cake)

   Combine rice flour, coconut, sugar, cashew, and cardamom powder for the filling. Roast the cashews in ghee until crispy and fragrant.

   Mix rice flour with salt. Gradually add hot water while stirring to form a moist, moldable dough.

   Divide the dough into portions. Flatten each piece in your palm, add filling in the center, wrap it up, and shape into a round ball.

   Place the shaped cakes in a steamer and steam with water vapor until fully cooked through.

   Remove from steamer and let cool. The finished sweet cakes stay soft even if left sitting for several hours.
