Instant Besan Cheela with Vegetables and Paneer

Add besan, rawa, green chilli, ginger, curd, turmeric powder, Kashmiri red chilli powder, salt, cumin seeds, and water to a blender. Blend until smooth without any lumps to create a consistent batter.

Cover the batter and set it aside to rest while you prepare the vegetable filling.

Roughly cut the cabbage, carrot, and capsicum into wedges, then place them in a food chopper and finely chop all the vegetables.

Transfer the chopped vegetables to a bowl, add the grated paneer, and mix everything together to prepare the filling.

Heat a dosa tawa or griddle on high heat. Sprinkle some water on the pan to check if it's hot enough—the water should sizzle and evaporate immediately. Wipe away any excess water and reduce the flame to medium-low.

Check the batter consistency—it should be similar to traditional dosa batter. If it's too thick, add half a teaspoon of water.

Pour a ladle of batter into the center of the tawa and spread it evenly with the back of a spoon like a regular dosa. Drizzle ghee on top and cook on medium-low heat until the base becomes crisp and golden brown.

Carefully lift or flip the cooked crepe, fold it if desired, and transfer to a plate.

Pour a ladle of batter in the center and spread it evenly. Immediately add the prepared vegetable-paneer filling on top and press it lightly. Drizzle ghee, sprinkle a pinch of salt, freshly crushed black pepper, and chopped fresh coriander.

Gently press the topping with a spatula so it adheres to the cheela. Cook on medium-low heat for 2-3 minutes until the base is crisp. Carefully flip the cheela, press again, and cook the other side for another 2-3 minutes until the vegetables are cooked through.

Once both sides are evenly cooked with beautiful golden-brown coloring, fold the cheela. The instant besan vegetable paneer cheela is ready to serve with curd and chutney.
