Measure 4 cups of green moong dal into a mixing bowl, add 3¾ cups of rice.

Add water and gently mix or rub the blend between your fingers, washing several times until the water runs clear. Ensure no excess moisture remains.

Spread the mixture under direct sunlight to dry, or if sunlight is unavailable, place it in front of a fan to dry completely. Ensure no moisture remains.

Divide the dried mixture into batches and grind each batch into fine powder. Add 1 teaspoon of salt and 1 teaspoon of cumin seeds to the premix powder.

Mix all the ground powders together. This premix powder can be stored for up to 6 months without spoiling.

To make dosa, take 1 cup of premix powder and mix with 1 cup of water to form a smooth batter. No need to add baking soda or any leavening agent.

Let the batter rest for about 30 minutes to ferment properly. After 30 minutes, if the batter is too thick, add a little water to reach the desired consistency.

Pour the batter onto a hot dosa griddle and spread evenly with a spoon or spatula. Cook until both sides are golden brown and crispy.
