Dry jerk seasoning3 tbsp
Garlic and herb seasoning1 tbsp

Paprika1 tbsp

Season the pork thoroughly with salt, black pepper, jerk seasoning, garlic and herb seasoning, paprika, green seasoning, fresh ginger, and browning in a bowl.

Massage the seasoned pork to distribute the flavors evenly, then let it marinate for at least 2 hours, preferably overnight.

Heat cooking oil and sugar in a pot over medium heat, caramelizing the sugar until it foams. Be careful not to burn it.

When the sugar starts to foam, add the marinated pork pieces and allow them to absorb the caramelized sugar, searing both sides until nicely browned.

Once both sides are browned, gradually add small amounts of water. Add slowly to avoid boiling the meat—we want a pot roast, not boiled pork.

Reduce heat to very low and slowly braise the pork until tender. Check occasionally to prevent burning and flip the meat on all sides for even cooking.

Continue braising for approximately 55 minutes total until the meat is extremely tender and cooked through. This technique locks in all the flavors and ensures a juicy, tender roast.

Carefully plate the pot roast pork—it will be extremely tender. Serve with fried plantains, coconut milk rice and peas, or a fresh garden salad.
