Place the cleaned oxtail in a bowl. Add salt, jerk seasoning, oxtail seasoning, garlic and herb seasoning, paprika, and browning for initial seasoning.

Add the green seasoning (blended scallion, thyme, garlic, and onion), chopped tomatoes, bell peppers, garlic, onion, and fresh thyme.

Massage the oxtail gently, ensuring every piece is thoroughly coated with the herb and spice mixture. Cover and let marinate for at least 1 hour to allow all flavors to infuse.

Heat cooking oil in a pot (not too much, as oxtail will release grease). Remove the marinating seasonings from the oxtail and sear the meat on both sides until golden brown to lock in the flavors.

Adjust the oil level in the pot as needed. Add the remaining marinade and enough hot water to cover all the oxtail.

Cover the pot and simmer on the lowest heat for 1 to 2 hours until the oxtail is tender (or use a pressure cooker for faster cooking).

After cooking, check the tenderness of the oxtail. Taste the sauce and make any necessary adjustments. Add ketchup to thicken the sauce and balance the flavors.

Add fresh thyme and one whole Scotch bonnet pepper. Cover and cook for another 7 to 10 minutes until done.
