Kalimera's Famous Greek Chicken Gyros

A classic recipe from the owner of Kalimera Souvlaki Art, Melbourne's celebrated souvlaki spot. The secret to this chicken gyros is the subtle blend of curry powder and mustard powder in the marinade. The marinade is quick to mix—just spices, no chopping or mincing required. Perfect for serving a group.

thick cut hot chipsprepared as you wish (fried, baked, air fryer) – seasoned with salt400 g

cos lettuce (romaine)finely sliced (5mm / 0.2")3 cups

pita breads20cm / 8" size, the slightly bready kind is best else any type5
Steps

Prepare the hot chips first if using, keeping them warm in a 100°C/200°F oven.

Mix all the marinade ingredients together and coat the chicken pieces thoroughly.

Marinate the chicken for at least 3 hours, preferably overnight.

Cook the chicken in a non-stick pan for 4 minutes on each side in batches, or use a BBQ. No additional oil is needed as the marinade provides enough fat.

Rest the cooked chicken loosely covered with foil for 3 minutes, then slice.

Mix all the sauce ingredients together.

Warm the pita bread in the microwave for 1 to 1.5 minutes to make them pliable.

Smear 3 tablespoons of sauce down the middle of each pita bread, top with chicken, lettuce, tomato, scatter with onion, pile on chips, and drizzle with more sauce.

Fold the gyros to enclose the fillings and wrap with foil to hold in place. Serve with remaining sauce and hot chips.
