Ingredients

Pearl millet (Kambu)Must be washed thoroughly and completely dried~1 cupest.
Water~6 cupsest.
YogurtTo enhance the cooling properties of the drink~½ cupest.
Salt~½ tspest.
Fresh vegetables (cilantro, green chili)For garnish and flavoring~¼ cupsest.
Raw mangoOptional accompaniment~1 mediumest.
Fermented chiliOptional accompaniment~2 tbspest.

Thoroughly wash the pearl millet and dry it completely.

Grind the dried millet into a fine powder using a blender or grinder.

Mix the millet powder with water to create a smooth batter.

Add the batter to boiling water and cook until it reaches a thick, paste-like consistency.

Cool the millet paste, shape it into balls, and add them to water in a clay pot.

Cover the container and leave it overnight to ferment, allowing beneficial bacteria to develop and making the millet more digestible.

The next day, bubbles will form on the fermentation surface. Mix well and add yogurt to enhance the cooling properties.

Season with salt, mix well, and the drink is ready to serve.

Pour into glasses and garnish with fresh cilantro and chopped green chili. Serve with raw mango and fermented chili on the side. Can be served chilled or at room temperature.
