Select fresh ash gourd, peel the skin and remove the seeds from the center. Grate the ash gourd finely using a grater or food processor.

Heat ghee in a heavy-bottomed pan over medium flame. Add cashews and raisins, roast until cashews turn golden and raisins plump up, then set aside.

Add the grated ash gourd to the same pan and cook over medium heat, stirring frequently, until all the moisture from the ash gourd evaporates.

Add sugar and saffron strands, mix well. Continue cooking until the sugar melts and combines evenly with the ash gourd mixture.

Gradually add more ghee in portions while stirring constantly. The halwa will become glossy and shiny as you add the ghee. When the halwa begins to release ghee around the edges, it has reached the desired consistency.

Fold in the roasted cashews, raisins, and cardamom powder, mixing everything together.

Serve the halwa warm. Each spoonful melts beautifully in the mouth with a rich, glossy texture and luxurious flavor.
