A bright, fresh Korean lettuce salad with a spicy, tangy, garlicky flavor balanced with sweet notes and sesame oil. Made to be served immediately with a crispy texture similar to freshly made kimchi but lighter and fresher.

Rinse the lettuce thoroughly under cold water, separating the leaves to clean between them well. Gently shake to remove excess water.

In a bowl, combine all seasonings: crushed garlic, chopped green onion, thinly sliced onion, dark soy sauce, fish sauce, sugar, vinegar, Korean hot pepper flakes, and sesame oil. Mix until the sugar is completely dissolved.

Tear the lettuce into irregular bite-sized pieces.

Pour the seasoning mixture over the lettuce and toss gently with your hands until all the lettuce is evenly coated with the seasonings.

Transfer the dressed lettuce to a serving plate and generously sprinkle with toasted sesame seeds. Serve immediately.
