Rinse 2.5 cups of rice two to three times to remove dust, drain, then add 2.5 cups of water and cook in a rice cooker.

In a small container, combine 2 tbsp soy sauce, 4 tbsp oyster sauce, 1 tsp dark soy sauce, 2 tbsp sugar, 2 tsp chicken bouillon powder, 2 tbsp Shaoxing wine, 10 tbsp water, and 1.5 tbsp cornstarch to make the sauce.

Cut 1 kg of chicken breast into bite-sized pieces.

Marinate the chicken with 1 tbsp soy sauce, 1 tbsp Shaoxing wine, 0.5 tsp white pepper, 1 tsp baking soda, 2 tbsp cornstarch, and 1 tbsp oil; massage well and refrigerate while prepping vegetables.

Smash and finely chop 8 garlic cloves; grate about 1 tbsp of ginger; thinly slice 4 green onions, reserving some for garnish; slice half a carrot.

Cut 400 g of broccoli into bite-sized florets.

Blanch the broccoli in salted boiling water for about 1 minute, then immediately shock in ice water to set the bright green color.

Heat 2 tbsp oil in a wok or pan over high heat, add marinated chicken in a single layer, and sear for 2–3 minutes until the bottom browns.

Stir and cook for 3–4 minutes more until the chicken is cooked through; stir frequently if excess liquid appears to help evaporate it.

Remove the cooked chicken and set aside.

Add 2 tbsp oil to the same wok, heat over medium heat, then add garlic, ginger, and green onions; stir for about 1 minute to infuse the oil with aromatics.

Increase heat to high, add the broccoli and carrot, and stir-fry for about 1 minute.

Return the chicken to the wok and stir everything together for about 1 minute.

Stir the sauce well, pour it into the wok, and continue stirring for 2–3 minutes until the sauce thickens and coats all ingredients.

Turn off the heat, drizzle in 2 tsp toasted sesame oil, and sprinkle with a generous pinch of toasted sesame seeds.

Divide the cooked rice evenly into 5 meal prep containers, leaving space in each, then distribute the chicken and broccoli mixture evenly among them. Garnish each with green onions.
