Melt the butter on very low heat and set it aside as soon as it reaches a liquid state.

In a mixing bowl, beat eggs with sugar and a pinch of salt on full speed for a couple of minutes until the mixture is light and fluffy.

Add the sour cream and lemon zest, then beat to combine thoroughly.

Sift the flour and baking powder together, then fold into the egg-sugar mixture until just combined.

Pour in the melted butter and mix well, then add the poppy seeds.

Scrape down the sides of the mixing bowl to ensure everything is well incorporated, then mix briefly on the machine.

Pour the batter into a prepared loaf pan.

Bake in a preheated oven at 320°F (160°C) for 50 minutes until the cake is fully baked.

While the cake bakes, squeeze the fresh lemons, strain the juice, and combine with limoncello to make the syrup.

Once the cake is baked, poke holes all over the top with a toothpick or skewer and soak generously with the lemon syrup.
