Rinse the white rice and urad dal separately two to three times to remove impurities.

Add the washed rice and dal to a pressure cooker with about 2 cups of water, cover, and cook on high heat until it whistles twice, then let the pressure release naturally.

Open the cooker and check that the rice and dal are fully cooked and soft.

Transfer the cooked rice and dal along with some water into a blender and grind until smooth and paste-like.

In a wide, thick-bottomed pot (heat off), combine the jaggery (about 1/4 to 1/2 cup, adjusted to taste) with the ground rice-dal paste, then stir in about 1 cup of water until well mixed and lump-free.

Once mixed, turn on the heat and add another cup of water to adjust consistency, stirring continuously to prevent sticking; use about 2 cups of water in total to reach desired thickness.

If the jaggery is coarse or impure, dissolve it separately with 1/4 cup water, strain out impurities, then add it to the porridge and bring to a boil while stirring.

Add the cardamom powder and stir well, cooking until the porridge reaches a thick, slightly sticky consistency.

Pour in the thick coconut milk, mix well, and continue to simmer, allowing the coconut milk to fully incorporate without removing from heat too soon.

In a separate small pan, heat the ghee and fry the chopped cashews over low heat until they change color.

Add the raisins and fry briefly until they puff up, then add a pinch of salt for flavor.

Finally add the grated coconut and stir-fry briefly without needing to change its color.

Pour the roasted nut and coconut mixture into the porridge, mix well, and turn off the heat.

Serve the delicious and nutritious lentil rice porridge warm.
