Heat butter on low to medium-low heat. Add finely chopped shallots, parsley, and herbs (rosemary, thyme, tarragon). Mix everything gently together, ensuring nothing browns. Season with salt and black pepper.

Maintain low heat and gently cook for about 5 minutes, allowing the herbs to release their flavors without browning. Turn off heat when time is up.

In a small bowl, combine Dijon mustard with a small amount of heavy cream or crème fraîche. Mix together thoroughly.
