Ingredients
Oil

Asafoetida

Green chili

Ginger

Curry leaves

Turmeric powder

Boiled potatoes

Fresh cilantro
~2 tbsp

Dosa batter
~1½ cups

Steps

Heat oil in a pan and add mustard seeds, chana dal, urad dal, cumin, and asafoetida. Toast until they crackle and become fragrant.

Add green chili, ginger, curry leaves, and onion. Sauté until the onion becomes soft and loses its raw smell.

Add turmeric powder and salt, mix well, and cook until the mixture becomes aromatic.

Hand-mash the boiled potatoes and fold them into the spiced mixture. Combine thoroughly until the filling is dry and evenly mixed.

Stir in fresh cilantro. The masala filling is now ready.

Take the dosa batter, add salt, and adjust the consistency to medium thickness for proper coating.

Shape the filling into small balls and dip each ball into the dosa batter, coating completely.

Gently drop the coated balls into hot oil and ensure they are fully submerged. Stir occasionally for even cooking on all sides.

Fry until golden brown and crispy, then remove and drain on paper towels to remove excess oil.

Serve hot with coconut chutney or sambar and enjoy every bite.
