Chop the 4 oz of bittersweet chocolate and set aside.

Pour 3 cups of whole milk (or non-dairy alternative) into a pot.

Add 3 tbsp cocoa powder, 3 tbsp sugar, 1 tsp cinnamon, a pinch of cayenne, and 1 tsp vanilla extract; whisk until smooth.

Place the mixture over medium heat, stirring occasionally, until steamy but not boiling.
