Minestrone Soup

   Add a little oil to a pot and cook the crumbled Italian sausage over medium heat until browned and fragrant.

   Strain the cooked sausage and return it to the pot; add the chopped onion, carrot, and celery, stirring until softened.

   Add the potato, skinned plum tomato, Italian herbs, and black pepper, stirring well to combine.

   Pour in 8 cups of chicken stock and bring to a boil.

   Once boiling, reduce heat and simmer for about half an hour. After 10 to 20 minutes, add the drained cooked beans and continue simmering until they are tender.
