Prepare the marinade by combining water, grated garlic, white miso paste, fresh ginger juice, light soy sauce, honey, cornstarch, and sesame oil. Stir well to combine.

Prepare the chicken thighs by placing them skin-side down. Slice along the bone as closely as possible, then make a few cuts into the thicker parts of the meat to help the marinade penetrate.

Marinate the chicken by stirring the marinade once more, then adding all the chicken thighs. Massage the marinade into the meat with your hands. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the oven to 180°C for at least 30 minutes. Remove the marinated chicken from the refrigerator and place it in a preheated casserole or roasting pan.

Add the peeled and sliced apples around and between the chicken pieces, then scatter cranberries or pomegranate seeds over the chicken, avoiding the skin to ensure it browns well.

Add fresh rosemary sprigs over the chicken and apples for flavour and festive appearance.

Roast at 180°C for 30 minutes. At the 20-minute mark, remove the chicken and baste with a honey-water mixture (1 tbsp honey mixed with equal parts water). Return to the oven.

After 30 minutes total, remove the chicken and baste once more. Increase the oven temperature to 200°C and return the chicken to the oven for another 8 to 10 minutes until the skin is beautifully browned.

Remove the chicken from the oven when beautifully browned. Serve with the roasted apples, cranberries, and fresh rosemary on the side.
