   Soak the dried golden apricots in water for 4-6 hours until softened, then chop them into small pieces.

   Roughly chop the almonds and pistachios to create a textured mix.

   In a large bowl, combine Greek yogurt with the chopped apricots, nuts, and heavy cream (or milk for a lighter version).

   Add Sugar Free Natura sweetener to taste, and optionally add vanilla extract for extra flavor.

   Mix all ingredients thoroughly until well combined.

   If using an ice cream maker, pour the mixture into the machine's container and freeze for 4-6 hours. Alternatively, transfer to a covered glass, steel, or plastic container and place in the freezer. As it starts to freeze, remove it every 30 minutes or so and stir well with a spoon to prevent crystallization.
