1
Place 1 cup of roasted peanuts into a completely dry blender jar, after first removing their skins, since the skins contain salt that can make the sweet taste off.
2
Grind the peeled peanuts coarsely into a powder and set aside.
3
In the same jar, add 1 cup of jaggery powder and grind it into a fine paste.
4
Combine the jaggery paste with the ground peanuts and knead thoroughly by hand until the mixture holds together well enough to shape.
5
Optionally, if using regular hard jaggery, grind it first on its own, then pulse it together with the peanut powder twice for a smoother mix.
6
Take small portions of the dough and roll them into balls with your palms, rolling smoothly to avoid cracks — no oil or ghee is needed since the peanuts release their own natural oil.
7
Your tasty, healthy peanut laddus are ready — made entirely without turning on the stove.
8
For the alternate method using raw peanuts, roast them in a pan over medium-low heat until the skins loosen easily and the peanuts turn crisp, being careful not to burn them on high heat.
9
Let the roasted peanuts cool completely, then rub off the skins with your hands.
10
Grind the peeled peanuts coarsely in the blender, then add 3/4 cup of jaggery and grind until fine.
11
Transfer the ground mixture to a bowl and shape it into laddus the same way as before to complete the second method.
