Pala Puri – Traditional Andhra Milk Bread

In a mixing bowl, combine 1 cup wheat flour with less than 1/4 tsp salt and 1 spoon of ghee. Mix well until the ghee is evenly distributed throughout the flour.

Gradually add water a little at a time, kneading until the dough becomes soft and smooth.

Apply a thin layer of ghee over the dough to keep it moist. Cover and rest for about 30 minutes to soften the dough for easier rolling.

In a small bowl, combine 1 tsp rice, a few cashew pieces, 6 almonds, some pistachios, and 1 tsp poppy seeds. Pour hot water over them and soak for about 30 minutes (or 1 hour in regular water if time allows).

Transfer the soaked ingredients to a mixer jar, add a small amount of boiled milk, and grind into a fine, smooth paste.

Add half a cup of freshly grated coconut and grind again. If the mixture is too thick, add a splash of milk and continue grinding until smooth, rich, and creamy.

Pour the ground paste into a heavy-bottomed pan and sauté on low flame for about 2 minutes until the raw smell disappears.

Begin by adding a small quantity of boiled milk first to blend the paste smoothly, then add the remaining 1 litre of milk. Keep stirring continuously on medium flame for about 20 minutes until the milk thickens to a rich, creamy consistency.

Add 3/4 cup sugar and 1 spoon of cardamom powder. Mix well and adjust sweetness to taste.

Add a pinch of saffron strands for colour and aroma. Set the milk mixture aside and allow it to cool completely.

Divide the rested dough into small balls and roll each one out into a thin puri. Sprinkle a little flour on the surface before rolling.

Gently prick the puris with a fork before frying to help them fry flat and crispy without puffing up.

Heat oil in a deep frying pan. Once hot, reduce to medium flame and gently slide in each puri. Fry evenly on both sides, flipping occasionally, until golden brown.

Take each crispy puri and gently dip it into the cooled milk mixture for a few seconds to absorb the creamy sweetness. Pour additional milk mixture over the puris before serving.
