Soak the split peas overnight in cold water. The next day, rinse thoroughly until the water runs clear.

Heat oil in a large Dutch oven and sauté the carrots, shallots, celery, and garlic until softened.

Add the smoked ham hocks, soaked split peas, and chicken stock to the pot, making sure the hocks are covered by liquid.

Add bay leaves and bring to a simmer. Let cook on low heat for 45 minutes to 2.5 hours until the split peas are completely soft and broken down.

Remove the ham hocks from the pot and pick all the meat off the bones, carefully checking for any remaining bone fragments.

Blend the soup to your desired consistency using an immersion blender.

Return the picked pork meat to the blended soup. Check the seasoning and adjust as needed. Serve hot or freeze for later use.
