Soft, buttery muffins bursting with juicy peach pieces and topped with a crunchy, crumbly pecan topping. Best made with ripe, in-season peaches, but canned peaches work beautifully too.
In a large bowl, whisk together all dry muffin ingredients. In a separate bowl, whisk together wet ingredients, then pour into dry mixture and stir about 14 times until flour is almost incorporated. Add the peach pieces and stir until flour is no longer visible, being careful not to overmix.

Line a 12-hole muffin tin with paper liners. Divide batter between the holes, filling almost to the top. Press extra peach pieces lightly into each muffin, then top generously with the crumble mixture.

Bake at 200C/390F (160C fan) for 23 minutes or until a toothpick inserted in the centre comes out clean. Let rest in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
