Ingredients: ¾ cups roasted peanuts; 10-15 garlic cloves; 15-20 shallots, peeled; 1 tsp coarse red chilli powder; 2 cups coconut milk; ½ tsp turmeric powder; ½ tsp coriander powder; 2 tsp Thai red curry paste; 1 tbsp tamarind paste; 2 tsp lemon juice; to taste salt; 1 tbsp brown sugar; ~2-3 bird eye chillies, diagonally sliced

A versatile creamy peanut sauce made with roasted peanuts, coconut milk, and Thai red curry paste. It has a rich, smooth texture with aromatic spices, tanginess, and subtle sweetness. Perfect as a dip, dressing, or condiment for skewers, noodles, grain bowls, or fresh vegetables.

Ingredients

roasted peanuts¾ cups
garlic cloves10-15
shallots, peeled15-20
coarse red chilli powder1 tsp
coconut milk2 cups
turmeric powder½ tsp
coriander powder½ tsp
Thai red curry paste2 tsp
tamarind paste1 tbsp
lemon juice2 tsp
saltto taste
brown sugar1 tbsp
bird eye chillies, diagonally slicedfor garnish~2-3est.

Steps

In a mortar, add garlic cloves with shallots and coarse red chilli powder, then crush them together coarsely.

Put the roasted peanuts into a grinder and process until they become a fine powder.

Heat a pan, then add coconut milk, turmeric powder, coriander powder, the crushed mixture, and Thai red curry paste. Cook for 2–3 minutes.

Stir in the peanut powder and cook for another 2–3 minutes.

Add tamarind paste, lemon juice, salt, and brown sugar. Cook until the sugar dissolves completely, then allow the sauce to cool thoroughly.

Garnish with diagonally sliced bird eye chillies and serve alongside salad, or use as a dressing.
