Preheat the grill to high heat for about 10 minutes. Thoroughly brush the grates clean, then oil them with a neutral oil-soaked towel to prevent sticking.

Gently work the ground beef until the meat lines are no longer visible, but do not overmix.

Form the patty on parchment paper. Press flat with one hand while pinching cracks along the edges with the other. Create a slight concave indent in the center and make sure the patty is slightly larger than the bun.

Transfer the patty to the hot grill using the parchment paper, then peel away the paper. Season immediately with kosher salt and freshly ground black pepper.

Turn down the direct heat to allow the burger to cook with ambient heat. Wait until the browning reaches more than halfway up the side and the top begins to change color.

Place two slices of American cheese on the burger arranged in a Star of David pattern. Spray a light mist of water to help melt the cheese.

Cook until the internal temperature reaches 135°F (medium), about 3-4 minutes. Toast the bun during this time until golden brown.

Remove the burger from the grill and let it rest for 1-2 minutes. Assemble the cheeseburger: toasted bottom bun, cheese-topped patty, toasted top bun.
