Prepare 3 pounds of fresh peaches. Score the bottom of each peach, blanch them in boiling water for 30 to 60 seconds, then immediately transfer to an ice bath for 5 minutes. Once cooled, peel away the skin.

Cut the peaches in half along the pit line, remove the pit, and slice the flesh into half-inch thick slices. Transfer to a large bowl.

Add 2/3 cup sugar, 6 teaspoons of cornstarch, 1 tablespoon of lemon juice, 2 teaspoons of vanilla, and 1 teaspoon of cinnamon to the peaches. Gently toss to coat evenly.

Take out the pie dough and roll the first disc on a floured surface into a 13-inch circle. Loosely roll it onto a rolling pin and transfer it to a pie pan, ensuring even overhang all around.

Roll the second disc of pie dough into an 11-inch circle. Using a pizza cutter or crimp cutter, cut the dough into 1-inch wide strips.

Pour the peach filling into the pie crust and use the back of a spoon to level the surface evenly. Dot the top of the filling with 2 tablespoons of butter.

Arrange the dough strips in a lattice pattern with 1-inch gaps between them. Fold half the strips up and weave the remaining strips across to create a lattice. Trim the edges to 1 inch of overhang, fold the edges, and crimp decoratively with your fingertips.

Make an egg wash by mixing 1 egg with 1 teaspoon of water. Brush the egg wash over all the pastry, ensuring complete coverage.
