If the potato is not yet cooked, boil it in its skin until tender. While still hot, peel it and transfer to a bowl. Mash thoroughly with a fork or potato masher.

Dice the bacon and cook in a pan over medium heat until golden and crispy. Drain excess fat, keeping only the bacon pieces.

In the same pan with a bit of bacon fat remaining, add finely chopped onion and minced garlic. Sauté until translucent and glossy.

Transfer the sautéed onion and garlic to the mashed potato. Season with salt, black pepper, mustard, and crème fraîche.

Add olive oil, balsamic vinegar, and vegetable broth. Stir everything together.

While the dressing is still warm, use an immersion blender to process it until smooth and well-emulsified for a creamy consistency.
