Place the rib roast on a cutting board and pat dry with paper towels. Tie the roast tightly with kitchen twine at 1-inch intervals to maintain its shape.

Brush vegetable oil all over the meat to help the salt and pepper adhere evenly.

Season generously with salt on all sides, then coat with freshly ground black pepper from all angles.

Place the seasoned roast on a refrigerator rack uncovered and refrigerate for 24 hours.

Remove the roast from the refrigerator and let it sit at room temperature for 3 hours. Prepare the herb butter by mixing softened butter with minced garlic, rosemary, thyme, sage, and lemon zest.

Spread the herb butter mixture generously over all surfaces of the roast.

Place a roasting rack in a pan. Arrange the sliced onion, diced celery, sliced garlic, cinnamon stick, bay leaves, and cardamom pods beneath the rack. Pour 1 cup of chicken stock into the bottom and place the seasoned roast on the rack above.

Roast uncovered in a preheated 450°F (230°C) oven on the center rack for 30 minutes.

After 30 minutes, reduce the oven temperature to 325°F (165°C), add another cup of stock, and continue roasting uncovered until a meat thermometer registers 120°F (medium-rare), about 2 hours more.

Remove the roast from the oven and cover loosely with aluminum foil. Let it rest for 30 minutes to allow juices to redistribute.

Remove the twine and slice the roast to your desired thickness. Use the pan drippings and vegetables to make a gravy if desired.
