Cut boneless chicken breasts into ½ inch cubes. Prepare the marinade by combining red chilli paste, salt, ginger-garlic paste, yogurt, garam masala powder, and fresh lemon juice.

Add chicken pieces to the marinade and mix well. Add 2 tbsp of olive oil and refrigerate for a few hours.

Prepare skewers and ingredients. Thread marinated chicken pieces and green capsicum pieces alternately onto skewers, creating an alternating pattern.

Heat a non-stick pan with olive oil and place the skewers on it. Turn the skewers regularly to ensure the chicken cooks evenly on all sides.

Prepare the orange sauce in another pan by heating orange juice. Add salt, black pepper powder, and sugar, cooking until the sauce thickens slightly.

Pack cooked rice into a mould, then unmould it onto a serving plate. Drizzle with olive oil.

Add butter to the orange sauce and mix well.

Place the cooked chicken skewers over the rice, drizzle with the orange sauce, and serve immediately.
