Combine whole wheat flour, salt, 2 teaspoons of ghee, and yogurt in a bowl. Add sufficient water and 2 teaspoons of oil, then knead into a soft dough. Cover with a moist cloth and let it rest for 15-20 minutes.
2
In another bowl, combine the cooked rice, red chilli powder, cumin powder, chopped green chillies, coriander, salt, and onion. Mix well until the filling is evenly combined.
3
Dust a work surface with flour and roll out the dough, dividing it into equal portions. Shape each portion into a ball, then flatten between your palms into a thick disc. Drizzle 1 teaspoon of ghee onto the disc, add a spoonful of rice filling in the center, and seal the edges completely.
4
Roll out the stuffed dough into a paratha using a rolling pin.
5
Heat a tawa or flat skillet. Place the paratha on it and cook through. Drizzle 2 teaspoons of ghee on both sides of the paratha and shallow-fry on medium heat until both sides are golden brown and crispy.
6
Cut the paratha into quarters and place on a serving plate.
