Pour 2.5 cups of warm water into a blender. The temperature should be comfortably warm to the touch (like bathwater for a baby), not hot.

Tear the roasted poblano pepper (already peeled, seeded, and stemmed) into pieces and add to the blender.

Halve four tomatillos and add them to the blender.

Add a large bunch of fresh cilantro to enhance flavor and create the desired green color.

Blend all ingredients until smooth.

Add 7 cups of all-purpose flour to a bowl and set aside 1 cup for later. Mix in 1 tablespoon of salt.

Add 2/3 cup of lard to the flour and work it in with your fingertips until the mixture resembles coarse breadcrumbs.
