   Sprinkle flour on your counter and add the salsa verde and tomato mixture, beginning to combine into a dough.

   Knead the dough for about 15 minutes until smooth and soft. If it remains sticky, sprinkle additional flour about 2 tablespoons at a time while continuing to work it.

   Form the dough into a large ball. It will still be slightly tacky, which is normal.

   Warm some lard on your hands and rub it onto the dough, then place the dough ball in a bowl in a warm spot such as an oven with just the light on. Allow it to rest for a minimum of 45 minutes.

   After resting, divide the dough into small balls. If the surface appears dry, lather your hands with a bit of warm lard before rolling each ball.

   Lightly tap or coat all the dough balls with a small amount of lard to prevent them from drying out.
