Sardine and Banana Heart Burger Steak

A budget-friendly burger steak made with canned sardines and banana hearts, served with a rich sardine-based gravy. A creative Filipino home cooking variation.

Cut the banana heart into quarters, remove the hard outer ends, then slice thinly. Place in a bowl with water and soak for at least 10 minutes to remove excess saltiness.

Drain the sauce from the sardine cans. Squeeze the fish dry and set aside. Reserve the sardine sauce for the gravy.

After 10 minutes, drain the soaked banana heart well using a strainer and squeeze gently to remove excess water.

In a bowl, combine the drained banana heart and sardines. Add onion powder, garlic powder, ground black pepper, and salt to taste.

Add egg to the mixture and use a potato masher to blend everything together quickly.

Gradually add all-purpose flour while mixing, adding a little at a time until the mixture reaches the right firm consistency without being soggy.

Shape the mixture into circles and flatten them gently to make burger patties. Shape all the patties and set aside.

Melt butter in a pan (margarine can be used as a substitute). Once fully melted, add flour and mix well.

Keep stirring as lumps will form. Add the reserved sardine sauce and tomato sauce, stirring as it gradually thickens.

Slowly add milk while stirring to make the gravy thicker and creamier. Adjust the consistency to your preference. Water can be used if milk is unavailable.

Add onion powder and a pinch of salt to taste. Turn off heat and taste to ensure proper seasoning. Cover to keep warm.

Heat a little oil in a pan without adding too much to avoid burning. Cook each burger patty until golden brown on both sides.

Place the cooked burger patties on a bed of rice. Pour the sardine gravy over them as desired.

Garnish with chopped parsley or green onion for color and presentation.
