Savory Ground Beef, Potato, and Spinach Stew

Heat oil in a large pot and add the ground beef. Season with salt and black pepper, then let it brown.

Cut the potatoes into chunks. Once the beef releases its juices, add the potatoes to the pot and season with more salt.

Finely chop the onion, garlic cloves, and serrano chiles.

Dice the tomatoes into small cubes.

Once the meat and potatoes begin to brown, add the chopped onion and garlic, allowing them to lightly brown.

Tear the spinach into large pieces.

Add the diced tomatoes and serrano chiles to the pot, letting the tomato juices release into the stew.

Stir in the spinach and let everything cook together until the spinach is tender.

Prepare the avocado sauce: halve the avocado, then add the serrano chiles, cilantro, half of the onion, salt, and a little water. Grind everything together in a molcajete (or blender) until smooth and well combined.

Serve the finished stew with the avocado sauce and warm tortillas.
