Prepare the semi-dried tomatoes: cut fresh tomatoes into four to six wedges and season with salt, black pepper, sugar, olive oil, crushed garlic, and herbs.

Place tomatoes in the oven and bake at 275°F (135°C) for 2 to 3 hours until slowly dried.

Prepare the mold: generously grease the inside of a fluted brioche mold with melted butter and coat with bread crumbs or grated Parmesan.

Prepare phyllo dough: stick 6 to 8 sheets of phyllo together with melted butter. Cut two strips for the basket handle and cut the remaining dough into a 9-inch square.

Place the square pastry over the mold and carefully apply the dough against the curves of the mold. Trim off excess dough.

Make the savory cake batter: beat eggs, olive oil, and salt on full blast for 5 minutes. Add milk and Tabasco pepper and mix well.

Add the sifted flour and baking powder and mix to combine.

Skin the semi-dried tomatoes to prepare them for the Mediterranean mixture.

Make the Mediterranean mixture: combine the semi-dried tomatoes, garlic, and olives, then fold into the savory cake batter.

Blind bake the pastry crust. Pour the batter in, filling it just less than two-thirds full.

Place the basket back in the oven and bake at 350°F (180°C) for about 45 minutes.

Let cool for 5 minutes and then demold the basket.

Make the cheese filling: combine bourgeois cheese, lemon zest, and heavy cream.

Once the cake cools to room temperature, decorate the basket with the cheese filling, semi-dried tomatoes, broccoli florets, cherry tomatoes, and olives. Season with fleur de sel and olive oil.
