   Lay out a rectangular sheet of puff pastry. Divide it mentally in half lengthwise. Spread red pesto evenly over one half and green pesto over the other half, leaving a narrow border around the edges.

   If desired, sprinkle a little freshly grated Parmesan cheese over the pesto for extra flavour.

   Carefully fold the edges of the pastry towards the centre. Start by rolling one edge inward toward the midline, then do the same with the other side, meeting roughly in the middle. Keep the pastry cold to prevent it from becoming too soft to work with.

   Once folded, place the roll in the freezer for 10 minutes if you want to use it right away, or keep it in the fridge until ready to serve.

   Using a sharp knife, slice the rolled pastry into approximately 1 cm wide strips, creating individual spirals. Repeat with any additional rolls.

   Arrange the sliced spirals on a baking tray with adequate spacing between them—puff pastry expands significantly during baking. Loosely cover the top with foil to prevent the filling from burning.

   Bake in a preheated oven for approximately 15–18 minutes, or until the puff pastry puffs up and turns golden brown. Baking time may vary depending on your oven.
