Prepare the lettuce by soaking it in cold water for about half an hour to make it crisp. If the water is not cold enough, soak in tap water and refrigerate. Drain well after soaking.

Rinse the tomato without soaking. Trim the crusts from the bread slices and store in a covered container to keep fresh.

Crack the 6 eggs one by one into a bowl to avoid shells. Pour in the full cream milk to help achieve soft and creamy scrambled eggs. Mix thoroughly.

Heat the butter over low heat until melted. Pour in the egg mixture. Cook over low heat, gently pushing the cooked egg from the edges to the center and breaking it into small pieces. Keep the heat gentle for a creamy texture.

Once the eggs are mostly set but still soft and creamy, turn off the heat immediately. Transfer to a bowl and use a fork to break into smaller pieces.

Mix the scrambled eggs with mayonnaise (3-4 tbsp), black pepper, white pepper, and salt to taste. Add lemon or lime juice for extra flavor and to prevent richness. Adjust seasonings to your taste.

Slice the tomato thinly using a firm (not soft) tomato. Dry the lettuce using a salad spinner or by gently shaking it dry.

Once the butter or margarine has softened, spread a thin layer on each bread slice.

Spread the egg filling on the buttered bread and smooth it out. Layer the tomato slices on top, then add the lettuce.

Cut the sandwich into quarters by slicing diagonally. Use light pressure when cutting to avoid crushing the bread.

Line serving trays with 4.5-inch paper doilies and arrange the sandwich pieces neatly. The 12 bread slices yield 24 triangular pieces that fit perfectly in 3 rows of 8. Store in the refrigerator for up to 2-3 days.
