1
Fill a large pot with water and bring to a boil with the halved onion, quartered lemon, coarse salt, and the boil-in-a-bag seasoning packet.
2
Once the water is boiling, add the baby potatoes and cook for 10 minutes until tender.
3
Add the corn pieces and cook for 7 to 8 minutes longer.
4
Check that potatoes are tender, then strain and transfer the potatoes and corn to a serving dish.
5
Return the pot to heat and add the crab legs and precooked crawfish. Cook for 4 minutes, then reserve 1 cup of the broth.
6
Transfer the crab legs and crawfish to the serving dish with the potatoes and corn.
7
In a separate pan over medium-high heat, cook the smoked sausage pieces for a couple minutes per side until browned.
8
Transfer the cooked sausage to the serving dish. In the same pan, sauté the onion for a couple minutes, adding a little oil if needed.
9
Add the unsalted butter to the pan and allow it to melt completely.
10
Add the freshly minced garlic and stir for about 30 seconds, being careful not to use jarred garlic as it has a different flavor.
11
Add all the dried spices: onion powder, garlic powder, Old Bay seasoning, Cajun seasoning, cayenne pepper (adjust to desired heat level), lemon-pepper seasoning, brown sugar, thyme, oregano, and paprika. Mix well and taste to adjust seasoning as needed.
12
Squeeze the juice of one lemon into the butter mixture, add the reserved broth, and let it simmer gently.
13
Add the cleaned and deveined shrimp to the butter sauce and cook for a couple minutes until they turn pink and change color.
14
Once the shrimp are cooked through, transfer them to the serving dish with all the other ingredients and serve hot with the spiced butter sauce for dipping.
