Season the shrimp with salt, cajun seasoning, paprika, garlic & herb seasoning, lemon pepper, and minced garlic. Drizzle with oil and mix well to coat everything evenly; set aside.

In a bowl, combine soy sauce, oyster sauce, sugar, minced ginger, sesame oil, cornstarch, and water to make the stir-fry sauce. Mix well and set aside.

Heat cooking oil in a pot or wok. Add the seasoned shrimp, distributing them evenly. Sear for about 30 seconds on each side until golden, then remove from the pot to prevent overcooking.

In the same pot, add all the vegetables and stir-fry over high heat for about 2 minutes, until they develop a smoky flavor while remaining crisp.

Return the shrimp and its juices to the pot, then add the prepared stir-fry sauce. Continue mixing and coating for about 2 more minutes until the sauce thickens and coats everything evenly.
