In a stand mixer bowl, add the bread flour and all-purpose flour, fluffing before sprinkling in to avoid packing it down.

Add the sugar, instant yeast, and salt, then whisk everything together.

Crack the eggs into a separate bowl to check for shells, then add the warm milk and eggs to the flour mixture.

Fit the dough hook, use a spatula to bring the mixture together into a shaggy dough, then mix on low speed for about 2 minutes.

Add the softened butter a little at a time while continuing to mix on low speed until all of it is incorporated.

Continue mixing on low speed for about 10 minutes to fully incorporate the butter and develop structure and elasticity.

Check the dough — if slightly sticky, add about 1 tablespoon of flour and mix for another 1–2 minutes until the dough is tacky but not sticky, and stretches elastically.

Transfer the dough to a lightly oiled bowl, roll to coat in oil, cover, and let rise in a warm spot for 45 minutes to 1 hour until doubled in size.

Turn the risen dough out onto a lightly floured counter and press it into a circle.

Divide the dough into 8 equal pieces.

Pinch the corners of each piece together to form a small dumpling shape, flip it over, and lightly round it with your hand — keep it loose rather than tightly shaped like a dinner roll.

Place the shaped dough onto a lined baking sheet and flatten with your hand into about a 3-inch circle. Repeat with the remaining dough pieces.

Loosely cover with a towel or plastic wrap and let rise for 30–40 minutes. About halfway through, preheat the oven to 400°F (about 204°C).

Whisk together an egg and a tablespoon of water to make an egg wash, gently brush it over the risen dough, and sprinkle with sesame seeds if desired.

Bake at 400°F (about 204°C) for 12–15 minutes, rotating the pan halfway through, until golden brown. Let cool slightly before enjoying.
