Light, fluffy Jamaican fried dumplings that are crispy on the outside yet pillowy soft inside. A simple and quick recipe that works well as a standalone snack or paired with soups.

Sift the flour into a large bowl to make it light and airy. Add salt, baking powder, and sugar, mixing well. Optionally add butter if using.

Gradually pour in milk or coconut milk while mixing to form a dough. Knead gently until the dough comes together, being careful not to over-knead as this is not bread-making. The dough should be soft but not too wet.

Cover the dough with a damp cloth and let it rest for 20 to 30 minutes.

After resting, divide the dough into 12 small pieces. Roll each piece gently between your palms into smooth balls, dusting lightly with flour if needed to prevent sticking.

Heat oil in a pan over medium heat. The oil should not be too hot—fry low and slow to allow the dumplings to cook through before the outside burns.

Carefully place the dough balls into the hot oil. After 2-3 minutes, they will start to float—flip them at this point. Ensure both sides are fried to a beautiful golden-brown color. Total frying time is about 7 minutes.

Once golden brown and fully cooked, transfer to paper towels to drain excess oil. Serve and enjoy.
