Spinach and Artichoke Dip Monkey Bread

Combine bread flour, sugar, kosher salt, and instant dry yeast in a mixing bowl. Add whole milk and water, then mix with a dough hook on a stand mixer.

Gradually add unsalted butter in pieces, ensuring each is fully incorporated before adding the next, until the dough becomes smooth and silky.

Shape the dough into a tight, tall ball and place it back in a lightly buttered mixing bowl.

Prepare a 12-inch cast iron skillet by generously buttering it. This is where the monkey bread will be assembled.

Let the dough rise at room temperature for about 1 hour until it has doubled in size.

Melt butter in a small sauté pan and add a dusting of garlic powder and onion powder to create garlic butter.

Divide the risen dough into bite-sized pieces, roughly the size of a ping-pong ball.

Dip each dough piece in the garlic butter and stack them in an even layer around the edges of the cast iron skillet. Loosely cover with buttered plastic wrap and let rise at room temperature for 45 minutes to 1.5 hours.

Prepare the spinach and artichoke dip: Cut about 12 oz of jarred marinated artichokes into bite-sized pieces.

Grate about 0.5 pounds of Monterey Jack cheese and 3 ounces of Parmesan cheese, and mix together to create the cheese base.

Heat the frozen spinach in a sauté pan with a little butter and a splash of water, then sauté with crushed garlic cloves.

Add the artichoke mixture, turn off the heat, and fold in 8 oz of room-temperature cream cheese cut into cubes.

Stir in 1 cup of homemade mayo and most of the grated cheese, reserving some for topping.

Season the spinach and artichoke dip with kosher salt and freshly ground black pepper to taste.

Bake the monkey bread in a preheated 350°F oven for about 20 minutes.

Remove from oven, top with the spinach and artichoke dip mixture and reserved grated cheese, then return to the 350°F oven for 15 to 20 minutes.

Melt 4 tablespoons of butter in a small sauté pan with grated fresh garlic.

Add fresh chopped parsley to the garlic butter mixture and brush generously over the finished bread rolls.
