St. Lucian Grilled Pork with House Sauce (Souskai)

   Clean the pork with lemon juice and vinegar. Rub the meat thoroughly with oil, salt, black pepper, all-purpose seasoning, green seasoning (blended onion, garlic, spring onions and pimento peppers), and curry powder.

   Mix the seasonings well into the pork, ensuring even coverage. Cover and let marinate for at least a couple of hours for best flavour.

   Prepare the house sauce: chop the spring onions, onion, garlic cloves, and pimento peppers. Use a food processor or knife to finely mince everything to your preferred texture.

   Transfer the chopped vegetables to a bowl. Add salt (about half a teaspoon) and mix well. Add oil (about a quarter cup or more to taste) and mix thoroughly. Taste and adjust seasonings as desired. Let the sauce sit to allow flavours to meld.

   Preheat the oven to 200°C (about 180°C is also used). Transfer the marinated pork and all its seasonings to a baking dish. Add extra garlic cloves for extra flavour. Roast for 20 to 30 minutes until the meat is partially cooked.

   Prepare the grill: heat your charcoal grill. Rub half an onion across the grill grates to sanitize, add flavour, and prevent sticking.

   Transfer the partially cooked pork from the oven to the grill. Grill for 10 to 15 minutes, flipping frequently on all sides until the meat achieves a beautiful caramelized colour with light charring. The smoke adds authentic Caribbean flavour.
