A classic Caribbean home-cooked meal featuring tender stewed chicken drumsticks caramelized in sugar, creamy mashed potatoes, soft pink beans cooked with aromatic seasoning, and buttered steamed carrots. Total cook time approximately one hour and thirty minutes.

Ingredients

Chicken drumsticks1 kg

Clean the drumsticks and season them lightly with oil, salt, all-purpose seasoning, curry powder, Sazon, green seasoning, black pepper and paprika. Mix well and marinate in the refrigerator overnight (or at minimum a few minutes) to absorb all the flavors.

Rinse the pink beans with water and drain. Add fresh water and soak overnight (optional but helps speed up cooking time).

Drain the soaked beans and add fresh water. Bring to a boil on low heat for about an hour without any seasonings to ensure quick cooking and reduce gas.

Heat oil in a pot and add brown sugar, allowing it to caramelize on medium-high heat for about 5 minutes until it reaches a dark brown color.

Add the seasoned chicken to the caramelized sugar, cover and let it sit for about 2 minutes without stirring to develop color.

Stir the chicken and cover again for about 5 minutes to allow juices to release. The chicken should develop a beautiful golden-brown color.

Stir again to ensure the chicken is well-browned and some of the liquid has evaporated to concentrate the flavor. Cover and let cook.

Open the pot and add ketchup and 3 cups of water along with one Scotch bonnet pepper if desired. Let the chicken stew for 30 to 40 minutes without stirring frequently to develop a rich gravy.

Peel the potatoes and cut them into quarters. Boil in 3 cups of salted water until soft, about 20 minutes.

Drain the cooked potatoes and add heavy cream and butter. Mash using a potato masher until smooth, adjusting the amount of butter to your preference.

Peel the carrots and season with all-purpose seasoning, basil and butter. Cover and steam on low heat for about 5 minutes to maintain a slight crunch.

Drain the cooked beans and sauté the green seasoning, all-purpose seasoning and Sazon in oil in a separate pot. Add the beans back in, stir well and cook on low heat for 5 to 10 minutes to absorb the flavors.

Check that the chicken is fully cooked and remove the pepper. Garnish with freshly chopped parsley and serve.
