Ingredients: 1½ lb chicken breast fillets, cut into cubes; 230 g Japanese breadcrumbs (panko); 2 eggs, beaten; ½ cup all-purpose flour; ¼ cups cornstarch; 1 tsp salt; ½ tsp ground white pepper; ½ tsp garlic powder; 1 cup cooking oil; 2 tsp sesame oil; 3 cloves garlic, minced; 1 tbsp rice vinegar; 2 tbsp honey; 2 tbsp sweet chili sauce; 3 tbsp tomato ketchup; 1½ tbsp brown sugar; ¼ cups soy sauce; 2 tbsp toasted sesame seeds; ¼ cups green onions, chopped

Chicken breast cubes coated with a crispy Japanese breadcrumb crust and deep fried until golden. Can be served plain or tossed in a sweet sticky sauce made with honey, chili sauce, and sesame oil.

Cut the chicken breast fillets into bite-sized cubes.

Season the chicken cubes with salt, white pepper powder, and garlic powder in a bowl. Mix well and let sit for about 10 minutes to allow the flavors to infuse.

In another bowl, mix together the all-purpose flour and cornstarch.

Prepare a third bowl and pour in the beaten eggs.

Pour the Japanese breadcrumbs into a fourth shallow dish.

Take a piece of seasoned chicken and coat it thoroughly with the flour-cornstarch mixture.

Dip the coated chicken into the beaten egg, making sure it is fully coated.

Immediately transfer to the Japanese breadcrumbs and coat thoroughly, pressing gently to help the breadcrumbs adhere well.

Repeat steps 6 through 8 with the remaining chicken pieces until all are coated.

Heat the cooking oil in a deep pan to medium-high temperature. Test the oil by dropping a breadcrumb into it; if it floats and sizzles gently without immediately browning, the temperature is right.

Carefully place the breaded chicken pieces one at a time into the hot oil and fry until the bottom turns golden brown.

Reduce heat to medium and continue frying until all chicken pieces are golden brown and cooked through. Remove and drain on paper towels.

Prepare the sticky sauce by mixing sesame oil, minced garlic, rice vinegar, honey, sweet chili sauce, tomato ketchup, brown sugar, and soy sauce in a bowl until well combined.

Remove the pan from heat, add the fried chicken pieces to the sauce, and toss gently until all pieces are evenly coated.

Garnish with toasted sesame seeds and chopped green onions.

Plate and serve immediately. Can be enjoyed over rice or on its own.
