Dilute the lemon juice with a little water in a small cup.

Pour full cream milk into a large pan and heat over medium flame while stirring constantly until it comes to a boil.

Once boiling, add the diluted lemon juice while stirring gently to curdle the milk into fine, crumbly curds—do not over-stir into a thick cheese.

Add jaggery powder and mix well. The powder dissolves quickly and reduces the risk of further curdling.

Cook the mixture over medium flame while stirring constantly until it reduces to about half its volume.

Stir in 1 tablespoon of ghee and mix well. Continue stirring carefully, as the mixture may splatter at this stage.

Keep stirring until the mixture becomes thick and condensed. Add cardamom powder and mix thoroughly.

Transfer the hot mixture immediately to a greased square pan and gently level the surface.

Allow the kalakand to set at room temperature for about 2 hours until completely firm.

Once set, cut into desired pieces and garnish the top with chopped pistachios.
