In a saucepan over medium heat, cook the butter, honey, brown sugar, dark brown sugar, vanilla, and citrus zests until boiling. Add the dried fruits and orange juice, cook for 2 minutes, then let cool completely.

Preheat the oven to 160°C (320°F). Beat the eggs and oil together, then add to the cooled fruit mixture and mix well.

Sift in the flour, baking powder, cinnamon, nutmeg, ginger powder, and salt. Add the nuts and mix until just combined.

Brush an 8×3 inch baking pan with butter and line with parchment paper. Pour the batter in and spread evenly.

Bake in the preheated oven for 1 hour or until a toothpick inserted in the center comes out clean. Brush the top with apricot jam or your preferred jam.
