Sweet and Sour Calamari

   Clean and gut the calamari, then open it up. Score the inner surface with diagonal crisscross patterns using a sharp knife. Cut into equal-sized squares.

   Mix together shrimp chili paste, chili sauce, ketchup, black pepper, salt, stock powder, fish sauce, and egg white in a bowl. Add the squid and marinate for 15 minutes.

   Cut the bell pepper, tomato, and onion into pieces matching the size of the squid. Slice the pineapple and cut the celery and green onion into shorter lengths.
