In a bowl, combine 1 teaspoon of baking soda and 0.5 teaspoon of salt. Salt helps balance the sweetness. Mix well.
2
In another bowl, add 1 cup of sugar and 1 teaspoon of cardamom pods, grinding them finely. Mix the ground cardamom sugar with the flour, add 1 teaspoon of oil, and combine all dry ingredients thoroughly.
3
Heat oil to medium flame. Take a spoon and heat it in the hot oil first, then place the batter into the heated spoon.
4
Tilt the spoon and let the batter slide into the hot oil. Fry until one side turns golden, then flip and fry the other side until the entire appam is golden brown.
5
Once the appam reaches the desired golden color, immediately remove it from the oil and place it on paper towels to drain excess oil.
6
Repeat the frying process with the remaining batter using the same method. Alternatively, you can simply scoop the batter directly into the hot oil without using the pre-heated spoon method if preferred.
